Red Lentil Vegetable Soup

 

 

1 cup red lentils

6-7 cups spring water OR vegetable broth

1-4" Piece kombu  (sea vegetable)

2 bay leaves

2-3 tsp. sesame oil

1 large onion, diced

2 celery stalks, diced

2 carrots, diced

1 ½ cups chopped Chinese cabbage (or any cabbage you have)

1 small butternut squash, cubed

Herb seasoning salt (or sea salt)

Parsley, minced

 

Directions: Bring lentils, water/broth, kombu and bay leaves to a boil. Boil uncovered for 10 minutes, removing the foam which rises to the top. Sautee vegetables and add to the lentils. Add seasonings and let simmer for 15 minutes. Serve warm and garnish each bowl with parsley.
