Angel Hair Pasta Salad




1 package angel hair pasta

½ cup parsley- minced

1 carrot- shredded w/ box grater or food processor

½ cup walnuts- chopped coarsely


½ cup canola oil

1 tblsp brown rice vinegar

½ cup + 2 tblsp tamari

2 tblsp Dijon mustard

2 garlic cloves (pressed)

Cook pasta until al dente. Run cold water over noodles to stop cooking process. Add chopped ingredients to pasta. Mix dressing in separate bowl, and then mix in thoroughly with pasta. You may need to add more tamari if sauce is not dark enough.
